Make Vegan Dark Chocolate Truffles in 4 Easy Steps

A dark chocolate ganache is made with chocolate, coconut milk, vanilla extract and salt. You will never believe that these are vegan.

Ingredients 


Makes: 40 - 50 truffles

  • 1 (165ml) tin coconut milk
  • 300g dark chocolate (at least 70% cocoa solids)
  • 1 tablespoon vanilla extract
  • 1 small pinch salt
  • unsweetened cocoa powder, for dusting
  • sieved icing sugar, for dusting
Method


Prep:20min  ›  Cook:5min  ›  Extra time:1hr chilling  ›  Ready in:1hr25min 

1- Melt the chocolate in a double boiler (or microwave on the lowest heat setting), stirring occasionally with a fork.

2- When the chocolate is fully melted, remove from the heat. Add the coconut milk, vanilla and salt, then mix until well incorporated. Place in the refrigerator, uncovered for 1-2 hours or until firm but still pliable.

3- Using a 10ml measuring spoon, scoop some truffle mix and shape as desired. Roll in cocoa (or other topping) to coat.

4- Allow them to sit at room temperature for a short while, before placing them into your mouth and enjoying. Store in an airtight container in a cool place (if you have any left).
